Teas offered here are imported by the Red & Green Company of San Francisco. The selection of teas includes specially chosen leaves of more familiar varieties of Chinese teas as well as some rare regional teas picked from plantations long known for the teas they grow and process. If your looking for a specific tea which is not listed here please ask and we will try to get it for you. While tea plants are all of the same genus, the variety in color, flavor, and aroma is the result of where in is grown, which leaves are picked (bud, new leaf, mature leaf) when it is picked (season or time of day) and how it is processed in order to attain the unique final brew.

  Brewing Unlike the English tradition of brewing tea with the water is at a rolling boil, most Chinese teas are best when brewing at sub-boiling temperatures. For Green teas, downy leaf and white teas made from young buds, 185 F gives the optimum flavor, Black, Oolong and Pu Er teas are best at 208 F. The amount of tea used and the duration of brewing is a matter of personal taste.
